Last week, we all weighed in and got started. I'll be curious to see how we all do over the course of the two months. Every person has their own approach to what they are doing. Some people are doing the Advocare 24 day Challenge, others are doing GNC shakes and bars, and I'm doing a Beachbody Health Bet and Shakeology. Lots of joined the gym and others are swearing off sodas and carbs.
Regardless of how we approach it, everybody is doing something. And, I'm excited to see where we all end up. And it is fun doing this as a collective group. Getting ready to start this, I created a Pinterest Board of recipes to share with our group.
One of my favorite, go-to recipes is a Quinoa Enchilada Bake. I probably make this once a week. My husband asks for me to make this! And he is a certified processed food junkie - so that says a LOT!
Basically, it is a can of beans, enchilada sauce, frozen corn, green chilies, quinoa, and shredded cheese. This can easily be your go to meal. It is healthy and is easy to keep the ingredients on hand!

I usually only add about 1/2 to 1 cup of cheese to this casserole.
Place in a greased 2 quart dish. Top with a little more cheese.
That's it! You can also make this ahead and place it in the fridge unbaked and have it ready for dinner later!
Quinoa Enchilada Bake
1 can of enchilada sauce
1 can of diced green chilies
1 can of beans (any kind) drained and rinsed
1/2 cup frozen corn
1 to 1 1/2 cups of shredded cheese
2 cups of quinoa
2 tbps of cilanto (you can leave this out - no pun intended)
1/2 tsp of cumin
1/2 tsp of chili powder
2 tbps of cilanto (you can leave this out - no pun intended)
1/2 tsp of cumin
1/2 tsp of chili powder
Mix all ingredients except 1/2 cup of cheese that you reserve for the top. Place in a greased baking dish. Bake at 350 until brown and bubbling. Enjoy!
