Favorite Fall Camping Recipes - 7 Comfort Meals We Love

Set your table with delicious comfort food this fall at the campground.
Some people are putting their RV's to sleep with bottles of 'pink drink'.  In the deep south, we are still camping.  Sure, temperatures are diving into the '30's at night, but the days are still nice and fairly warm.  In many ways, this is the perfect camping weather for us where sweltering days last for months.  The break in the heat is the perfect excuse for cozy nights by a fire and comfort food.


If you are looking for camping meal ideas, I've created a list based on some tried and true favorites.  These meals are not complicated, but the complex flavors will have your crew coming back for more!  So, get ready to ring your dinner bell.  I have 7 camping recipe favorites.

Dutch oven enchiladas are stacked and layered before cooking.


Dutch Oven Enchiladas

This dish feeds a crowd.  You can prep the meat ahead of time at home and pack in a container to mix with the rest of the ingredients.  Since you layer the ingredients into the Dutch Oven and let the charcoal do the work, this could also be a great first night meal.  We serve this with sour cream, jalapenos, salsa and guacamole on the side.  You can also add a salad.

If you have vegetarians in your crew or want to make as a vegetarian option.  I would substitute black beans in place of the meat.  You can drain and rinse canned beans.  Season them with the taco seasoning just as you would the meat, and it would provide you with the same great flavors but without the meat!

Bake potatoes in your crockpot while you enjoy doing something else!


Baked Potato Bar

Cook potatoes in a crockpot for a meal that is ready at the end of a day of hiking or other activities.  Wash and pat your potatoes dry.  Prick the skin of the potato with a fork or knife.  Place each potato onto a piece of foil, drizzle with olive oil and a pink of salt.  Close each foil packet.  Pack into a crockpot.

I recommend starting them on high for several hours (2 to 4 hours).  You can then switch to the low setting (4 to 6 hours).  This will take a full day to really cook a lot of potatoes.  So, get these potatoes on right after breakfast.  Even though this takes several hours, it is perfect for a cool day outdoors.   Serve with sour cream, butter, green onions, bacon bits, chili or any other favorites that you have.  Even your pickiest eaters will love this meal!  You can use leftover potatoes for breakfast with eggs!

The Pioneer Woman's Chili is just right for fall nights!

Pioneer Woman's Perfect Chili

This chili lives up to its name.  It is perfectly seasoned but not too hot.  For those that love spice, you can provide jalapenos for a topping.   You could also prepare this at home and freeze to take to the campground for an easy meal.  Use leftovers for your baked potato bar, hot dogs, nachos or burgers at another meal.  That is what we have done before.  This has become my favorite chili recipe, and I think you will love it too!

Cook up a pan of brats with onions, cider, mustard, and brown sugar.  It's a perfect combination!

I cannot get enough of the Campground Gourmet cookbook.  We recently tried this recipe on a fall trip with friends.  It was so much easier than we first thought, and the results were amazing.  Nothing screams fall like apple cider and brats.  It is just right for a fall evening under the stars.  Serve with hearty rolls, or you can enjoy it without the bread.  Potato salad and baked beans work with this meal or you can add a salad.

Cornmeal Waffles with Blackberry Syrup

This is another favorite from the Campground Gourmet.  I make the waffle mix (dry ingredients) at home along with the sauce.  At the campground, I make the waffles and serve with the sauce and whipped topping.  We have enjoyed these waffles on multiple camping trips.  I use frozen mixed berry fruit to make the sauce in place of blackberries many times.  The combination of cornmeal and berries is always delicious.  It makes enough for a large crowd, so this is just right for a group if you are camping with friends.  You can also reheat the leftovers on a griddle or electric skillet. 

You can't go wrong with an apple dump cake.  Try one of the variations below.

Top with whipped cream or Greek yogurt.

Crock Pot Apple Dump Cake

Crockpots are my best friend for cooking in the fall.  I can set it and forget it.  You can make this recipe with 3 ingredients - cake mix, butter, and apple pie filling.  Or you can make your own apple filling with apples, cranberries, cinnamon, sugar, corn starch, orange zest, and juice.  I like the latter because I feel like it has a fresher and better taste.

Below are three variations of this.  For each, butter or spray your crockpot.  Place your fruit on the bottom.  Evenly spread your cake mix over the top.  Place your butter pieces evenly over the top.  Cook on low for 2 to 3 hours.  If you have used the fresh fruit option, it may take a little longer.  Just check your fruit to see if it is soft.  I like the last option the best!

Crock Pot Apple Dump Cake
1 box of yellow cake mix
1 stick of butter - cut into pieces
2 cans of apple pie filling

Crock Pot Apple Spice Dump Cake
1 box of spice cake mix
1 stick of butter - cut into pieces
2 cans of apple pie filling

Fresh Apple and Cranberry Apple Dump Cake
6 small or 3 large granny smith apples - cut into slices
1 cup of fresh or frozen cranberries
1 cup of brown sugar
1 heaping tablespoon of cinnamon
1 pinch of salt
1 box of yellow cake mix
1 stick of butter cut into pieces

Prepare your apple cinnamon oatmeal in your crockpot before you hit the bed at night!  Wake up to breakfast that is ready when you are.

Crock Pot Apple Cinnamon Oatmeal

This is my go-to recipe for breakfast that is ready when we get up.  I've made this at home too.  Apples, cinnamon, butter, oatmeal, and water/milk will give you a warm and delicious start to your day.  You can adjust the sugar if you like.  I typically do.  This recipe is a little sweet for me.  Throw in some craisin or cranberries if you like.  We also enjoy topping ours with a spoonful of plain, greek yogurt for added protein.
