When you think of summer, you may have visions of burgers and hot dogs on the grill. These things are certainly favorites for many, don't confine your culinary choices to the traditional. If you are looking for a little summertime meal inspiration for the campground, this is for you. And hey, you can have these meals at home too! I'm sharing 6 of my favorite meal ideas for summer!

Our Favorite Summer Camping Meals
Meals don't have to be complicated or fancy for them to be delicious. I'm blessed to have a crew that is pretty agreeable at the dinner table. And this makes mealtime a lot less work!

Snack Board
One of my all-time favorite meals for summer both at home and at the campground is a snack board, snack tray, or charcuterie board. You can call it whatever you want, but a snack board consists of anything you want. Pull out some cheeses, meats, fruits, and veggies. Add some hummus, dip, or crackers, and you have an entire meal.

The best part of this is that you can use up leftovers this way. This meal requires no cooking, and it's so fun and easy! If you want to specifically plan for this meal, look for meat and cheese tray-type options that have a variety included. I found these at Kroger. We enjoy these for lunch and dinner options! Put this at the top of your list!

Cheeseburger Salad
Ree Drummond, the Pioneer Woman, has a brilliant twist on the classic cheeseburger! Make a cheeseburger salad. This meal is just right for the campground because you can prep everything ahead of time and just put it all together at the campground.
I cook and season my meat at home. I take shredded cheese, bagged lettuce, and the other toppings ready to go. Then, it is a snap to serve your meal. Plus, you can eliminate the croutons for a low-carb option. Everyone in my family loves this meal, and it's a light and fresh alternative.

Pimento and Cheese
Pimento and Cheese is a southern staple. It is delicious on crackers, sandwhiches, celery, or even on a burger. The recipe I use is from a college roommate's grandmother. It has grated onion and crushed pineapple. I like to use a mixture of white sharp cheddar and yellow cheddar cheeses for some added flavor. Once you try this pimento and cheese, you won't ever want store-bought again.
Make it at home and have it for easy lunches. You can also add this to your snack tray meal!

Shimp Tacos
Our family loves tacos. I make several different kinds but fish and shrimp tacos are my favorite. Kate Dunbar, the author of the Campground Gourmet, has an excellent recipe for the best shrimp tacos we have eaten. They are full of flavor but not too spicy. You can spice them up with your favorite toppings. And, I think these are kid-friendly too! It makes enough to feed a crowd or enjoy leftovers the next day!

Quinoa Enchilada Bake
This meal is actually a year-round meal at our house. You can make this ahead of time and take it to the campground in your cooler or RV fridge. I typically have one of these in our RV freezer all of the time for something easy to grab and cook at the campground.
It starts with cooked quinoa. Mix in corn, beans, green chilies, enchilada sauce, cumin, and chili powder. Top with cheese and bake. It is packed with flavor and nutrients. I serve this with a little greek yogurt and jalapenos. The Damn Delicious blog has so many great recipes, and this is one that we have regularly at home and at the campground!

Steak with Our Favorite Marinade
I love to cook a good steak dinner over an open flame. This steak marinade is simple and works perfectly every time. Kate Dunbar from the Campground Gourmet also has a great steak marinade with espresso. I make my marinade at home. I throw my steak in a zip lock bag and marinate in my cooler or fridge on the way to the campground. Serve it with some roasted or baked potatoes and a simple salad, and you have a steakhouse meal!
Each one of these meals can be prepared with little effort at the campground. The last thing I want to do in all of this heat is spend a ton of time over a grill or hot stove. I like meals to be easy and cool so that I enjoy as much of that time with my family.
