5 Delicious Camping Meals to Enjoy on the Road


When it comes to camping, nothing beats a hearty meal enjoyed under the stars. Whether you’re gathered around the campfire or tucked away in your cozy RV, these five meals are our go-to favorites. From classic comfort foods to easy prep-ahead dishes, here’s a mix of our most-loved camping dinners that are sure to satisfy the whole family.

1. Pizza Night

Pizza is a crowd-pleaser, no matter where you are. We love to bring along a few pre-made pizza doughs and toppings like pepperoni, cheese, and fresh veggies. You can either cook them in a cast iron skillet over the fire or, if you’re lucky enough to have an RV with an oven, bake them to perfection inside. For a little twist, try grilling your pizza directly on the grates—just be sure to keep an eye on it so it doesn’t burn. The result? Crispy, cheesy goodness that’s sure to be a hit.

I have two go to recipes for pizza crust.  Both can be prepared ahead of time and stored in the fridge until ready to use.

  • Sourdough Pizza Crust - If you have sourdough and want to make pizza, this is my crust that we have loved for years.  It is easy and works well every time.
  • Copy Cat Pizza Hut Crust - This is our new family favorite.  You can make the crust up to 4 days in advance.  It is a simple water, flour, salt, sugar, yeast dough that has one sneaky ingredient - powdered milk!  I love this crust so much!  It is fluffy, soft and so yummy.  Plus I make the copy cat sauce as well.  You can also make these in little cake pans that fit perfectly in your Dutch Oven!  

Tip: Pre-chop your toppings at home and store them in separate containers for easy assembly at the campsite.

This quinoa bake freezes great!  I like to keep one in the freezer for quick meal I can thaw and bake!


2. Quinoa Enchilada Bake

This quinoa enchilada bake is one of our favorite make-ahead meals. It’s packed with flavor and super easy to warm up on the road. Before your trip, cook the quinoa and mix it with black beans, corn, enchilada sauce, and plenty of cheese. Store it in a disposable aluminum tray, and when you’re ready to eat, just pop it on the campfire or in the RV oven until it’s hot and bubbly. Top with avocado, sour cream, and fresh cilantro for a meal that’s as nourishing as it is delicious.

I have used the Damn Delicious Quinoa Enchilada Bake for years.  This is also a vegetarian option and is a great meatless option during Lent or for any meal really.  It freezes great.  So, I typically have one in the freezer ready to go.

Tip: This dish is great for those looking for a healthier option that doesn’t skimp on taste.

3. Taco Night

Taco night is always a highlight of our camping trips. We keep it simple with pre-cooked taco meat (beef or turkey), which we heat up over the fire. Then, it’s all about the toppings—shredded lettuce, cheese, salsa, guacamole, and sour cream. We set up a taco bar so everyone can build their own, whether they prefer a traditional taco shell or want to keep it light with a lettuce wrap. The best part? Clean-up is a breeze.

I did a whole post about hosting a taco night at the campground a few years ago.  I do a combo of tacos that we love.

  • Martha Stewart's Beef and Cabbage Tacos are perfect and easy to make!
  • I am also a fan of making grilled fish or shrimp at the beach.
  • Finally, don't sell just a box taco kit!  Make them with ground beef, turkey, chicken or a can of black beans!  

Tip: Soft tortillas can be warmed up directly on the campfire grill or over a skillet for that perfect char.  Also, if you are serving tacos, don't forget the margaritas.  I have three favorite recipes that we love!



These cheeseburger sliders are like a cross between a sloppy joe and cheeseburger.  So good!


4. Cheeseburger Sliders

Nothing says camping like a good cheeseburger. We love making sliders because they’re easy to handle and cook quickly. Season your ground beef with salt, pepper, and a little garlic powder, then shape them into small patties. Grill them over the fire or on a portable grill until they’re juicy and delicious. Add a slice of cheese in the last minute of cooking so it melts perfectly. Serve them on mini buns with all your favorite toppings—ketchup, mustard, pickles, and maybe a slice of bacon if you’re feeling indulgent.

Lately I've been doing a cheeseburger slider that is more of a cross between a sloppy joe and cheeseburger.  You start with browned ground beef that is then seasoned in a sauce that reduces down and put onto Hawaiian rolls with American cheese and pickles.  The ground meat can be prepped at home or the campground and toasted in the oven to finish.  These are so easy and good!

Tip: Prep your patties ahead of time and store them in the cooler. That way, you can go from hungry to happy in just a few minutes.

This pasta with vodka sauce is perfection. I make the sauce and home and freeze to eat on the road. 

                                                        

5. Pasta with Vodka Sauce

When you’re craving something cozy, pasta with vodka sauce is a must. This dish feels fancy but is surprisingly easy to make at the campsite. Bring along a jar of your favorite vodka sauce (or make your own at home), and cook up some pasta over the camp stove. Once the pasta is al dente, simply mix in the sauce and let it simmer for a few minutes. Add some grated Parmesan and fresh basil on top, and you’ve got yourself a meal that feels like a little luxury on the road.

I even use the Damn Delicious Vodka Sauce.  I make it at home and freeze it or take it in jars.  All I have to do is make the pasta, a salad and serve with bread.  This has become our New Year's Eve dinner and is so cozy and warm when it is cold out.  

Tip: Pair this dish with a side of garlic bread cooked over the campfire for an extra treat.
