When camping, a hearty breakfast sets the tone for an adventurous day. Whether you’re nestled in your cozy Grand Design RV or setting up under the open sky, these six breakfast favorites will fuel your mornings with flavor and energy. Breakfast is one of the easiest meals to prepare.  We have 6 staples that stay on our rotation list.  On.  travel and tow days, we keep it simple with things we can have ready in a hurry.  For leisurely days at the campground, I'll take a little more time and effort with biscuits or pancakes.  No matter what you serve up, take time to put your feet up and enjoy a cup of coffee and just enjoying where the road takes you!

1. Sourdough Pancakes

These sourdough pancakes are a delightful way to start your day. The tangy flavor of the sourdough combined with the fluffiness of the pancakes makes for a breakfast that’s both satisfying and unique. The batter is prepared the night before, allowing the sourdough starter to work its magic, so all you need to do in the morning is cook them up. Top with maple syrup, fresh berries, or a dollop of yogurt for a breakfast that’s sure to please everyone around the campfire.

Ingredients:

  • 1 cup sourdough starter
  • 2 cups buttermilk
  • 2 cups flour
  • 2 tbsp sugar
  • 2 eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 4 tbsp melted butter
  • Butter for cooking

Instructions:

  1. In a large bowl, mix the sourdough starter, flour, sugar and milk. Let it sit overnight.
  2. In the morning, whisk in the egg, baking soda, butter and salt.
  3. Heat a skillet or griddle over medium heat and melt a bit of butter.
  4. Pour batter onto the skillet, forming pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown.

If your don't have sourdough starter, a traditional box mix or buttermilk pancake will do.  So, don't limit yourself here.

  3. Spread the mashed avocado generously on the toasted bread.

  5. You can also add some cottage cheese to the top and hot honey to take it to the next level and add some protein.
Adding cottage cheese and sour dough bread will increase your amount of protein for this meal and make it really hearty!

Simply combine steel-cut oats, water or milk, cinnamon, and your favorite sweetener in a crockpot before you go to bed, and wake up to a warm, comforting bowl of oatmeal. It’s an excellent option for cold mornings when you need something warm and filling to start your day.

Ingredients:

  • 1 cup steel-cut oats

If you prefer, you can also make this with chopped apples.  They cook into the oatmeal and are really nice with the cinnamon!  If I add apples, I add three or four granny smith ones!
